The Fiesta de la Rosa del Azafrán celebrates the harvest of saffron — the world's most expensive spice — in the stunning setting of Consuegra, home to a row of 12 whitewashed windmills and a medieval castle on the Cerro Calderico ridge, the very landscape that inspired Cervantes' Don Quixote.
The festival's centrepiece is the saffron picking competition ('concurso de monda'), where participants race to separate the delicate red stigmas from the purple crocus flowers. A medieval market fills the town with artisan stalls, period costumes and traditional crafts.
The backdrop of the iconic windmills against the vast La Mancha plain makes this one of Spain's most photogenic festivals. Traditional manchego cuisine, including pisto manchego, migas and queso manchego, features prominently.
